Portrait of Nick Barkin
“If I like it I share it, and if it 'sells' or 'flops' I don’t care because I love it and I'm happy with whatever that might be.”

Nick Barkin dusted his hands in flour for the first time before he was tall enough to reach the prep table without standing on his toes. Born and raised in Las Vegas, he arrived into a household transplanted from New York, where pizza was treated less as a casual meal and more as a cultural lineage. While the rest of his family carried memories of borough slice shops, Barkin grew up in the desert with an apron already tied around his waist. By age six, the craft had found him. Two decades later, at twenty-six, he is still operating out of the very same infatuation, running Above The Crust with the deliberate obsession of an artisan and the deep pride of a true local.

The Realization at Graduation

For years, working with dough, crushed tomatoes, and hot deck ovens felt like second nature—the rhythm of everyday life. The turning point arrived when Barkin finished high school and caught himself looking at the work through an entirely different lens. What could have remained an inherited family routine suddenly crystallized into an intentional pursuit.

He recognized that he held a rare canvas in his hands. "The moment I graduated high school and realized I have more than just a job—I have a creative passion for pizza and community," he recalls. Stepping behind the line every day was no longer simply about keeping up with orders; it was about treating food as a dynamic form of expression, tethered directly to the neighborhoods around him.

The Fearless Pursuit of Craft

Inside the kitchen at Above The Crust, Barkin approaches the menu with a tinkerer’s spirit. The gap between a novel idea and a finished pie is traversed through endless trial, error, and an appetite for creative risk. While many restaurateurs are paralyzed by the fear of customer hesitation, Barkin refuses to let commercial calculus choke off instinct.

"The constant thrill of coming up with something new keeps my brain fresh and keeps people excited to see what’s next," Barkin explains. "I’m very forward on if I like it I share it, and if it 'sells' or 'flops' I don’t care because I love it and I'm happy with whatever that might be." That lack of pretense gives his kitchen its vitality. Whether an experimental specialty pie becomes an instant neighborhood staple or remains a short-lived curiosity, the act of putting something personal onto the peel is what matters most.

Shoulders to Stand On

Barkin makes no claim to solitary genius. Instead, he speaks of his culinary journey as a tapestry woven by mentors and champions throughout the Valley. His most enduring inspiration remains his late business partner, who passed away recently after instilling in Barkin the hard-earned wisdom of disciplined enterprise and granting him the foundation to build his life.

In the craft itself, he looks up to Metro Pizza’s John Arena—revered as the city’s undisputed "pizza Yoda"—whose encyclopedic knowledge and boundless generosity set the gold standard Barkin aspires to reach. Beyond the kitchen, he studies the operational mastery of the Fertitta family and leans on creative collaborators like Damian of HookedLV, who modernized the brand’s community presence through digital storytelling. Grounding it all is his wife, Haley, who weathers the punishing hours, early starts, and late finishes with steady determination, keeping him motivated when the grind tests his resolve.

Feeding the Neighborhood Forward

Ask Barkin what keeps the oven fires burning, and the answer never circles back to vanity metrics or restaurant accolades. It comes down to the dinner rush on an ordinary Tuesday evening.

"Success to me is seeing the happiness on everyone’s face everyday when they eat, or knowing that I have people relying on me to provide for their family dinners or special occasions," he says.

Looking down the road, Barkin isn't chasing trends or rushing to reinvent his lane. His vision for the future remains rooted in the city that watched him grow from a six-year-old flour-dusted apprentice into an owner and community fixture. He is simply building toward getting better each day, treating every guest with unvarnished kindness, and ensuring Las Vegas always has a reliable seat at his table.
