Rachel Kim Lost Everything in 2020. Then She Started Walking.
A closed restaurant, a health scare, and one 4-mile hike at Red Rock that became a daily practice.

In April of 2020, Rachel Kim closed the doors of her Summerlin restaurant for what she thought would be two weeks. It ended up being permanent. Two months later, in the middle of the closure, she got a stage-two cancer diagnosis.
"I stopped counting the losses at some point," she says. "It stopped helping."
The 4-mile decision
She started hiking at Red Rock Canyon the day after her second chemo appointment. Four miles, one route, every morning she could stand up. No phone. No podcast. No agenda.
"I wasn't hiking for fitness or clarity or any of that. I was hiking because it was the only hour I felt like myself."
What came back, in order
- Sleep. Slowly. - Appetite. Weird foods first — lemons, cold soup. - A sense of humor. She calls this the real recovery milestone. - A new business idea, on mile three, on a Tuesday.
What she does now
Rachel runs a small catering company focused on cancer patients and their families — real food, delivered gently. "Hospital food kept me alive, but it didn't keep me human. I wanted to be the human part."
She still hikes every morning. "Rain, wind, whatever. Four miles. It's non-negotiable."
